Vegan Sweet Potato Christmas Biscuits VIDEO
Heather Nauta of Healthy Vegan Recipes shows us how to make delicious vegan biscuits for Christmas and Winter Holiday festivities.
Heather states on YouTube: "This sweet potato biscuits recipe was given to me by a friend a few years ago. It wasn't vegan, but was easily adapted. These biscuits are perfect as part of a holiday meal, and incorporate sweet potatoes in a different way than usual. Vegan Christmas recipes for sweet potatoes are often my favorites since I love the flavor, and I am eternally grateful to the friend who gave me her amazing recipe."
INSTRUCTIONS
Time from start to eating: 1:10.
Makes 12 biscuits.
RECIPE
1 small sweet potato
3 Tbsp melted coconut oil
1 Tbsp maple syrup
1 cup whole grain flour
2 tsp baking powder
pinch salt
Directions
Bake the sweet potato at 350F for about 45 min. until tender.
Allow it to cool, then remove the pulp and mash.
Measure out 1 cup.
Combine the mashed sweet potato in bowl with half the coconut oil and all of the maple syrup.
Mix the dry ingredients in a separate bowl, then add to the potato mixture and blend well with a fork.
On a floured board, pat the mixture out into a 1/2 inch thick circle and cut into 1 inch rounds, or simply drop spoonfuls of dough.
Put them onto greased or parchment-lined cookie sheet, then brush each with some of the melted coconut oil.
Bake at 375 F for 10 minutes, or until lightly golden on top.
Serve fresh and hot.

Vegan Gingerbread Cookies VIDEO

I haven't seen many healthy vegan Christmas recipes for gingerbread, but since it is one of my favorite Christmas (or any time) treats I have gone through a lot of experimentation to come up with the best vegan gingerbread recipe.
It's a bit trickier than some other recipes, but creates the perfect texture for cutouts or houses.
If you're feeling really daring, you can make gingerbread ornaments for your tree.
Prep Time: 30 min. Cooking time: 12-15 min.
Time from start to eating: 42-45 min.
Makes 30-40 cookies, or 1 gingerbread house.
Healthy Vegan Gingerbread Recipe Ingredients
½ cup brown rice or maple syrup
½ cup molasses
pinch of salt
1 ½ tsp ground ginger*
1 tsp ground allspice*
1 tsp ground cinnamon*
½ tsp ground cloves*
1 tsp baking soda
½ cup coconut oil
2.5-3 cups whole wheat (or other whole grain) flour
*or 4 tsp Gingerbread Mix - Homemade Spice Mixes
Healthy Vegan Gingerbread Recipe Directions
In a 3-quart saucepan, combine syrup, molasses, salt and spices. Heat to boiling over medium heat, stirring occasionally with wooden spoon.
Remove from heat, stir in baking soda.
Stir in oil until it is thoroughly combined.
Add 3 cups of the flour.
On a floured surface, knead the dough until thoroughly blended, adding additional flour as necessary.
Divide dough in half, wrap one piece in plastic wrap and set aside.
Preheat oven to 325F.
With floured rolling pin, roll remaining piece of dough slightly less than ¼ inch thick.
With floured cookie cutters or a knife, cut dough into shapes or according to dimensions for a house. Reserve trimmings and reroll.
Place cookies, fairly spaced, on cookie sheets. If you plan to hang cookies as decorations, make a hole in the top at this point.
Bake until brown around edges, about 12 min.
Makes 30-40, depending on size of cookie cutters.

The United States is one of the few nations where genetically modified foods do not need to be labeled as such. This is an outrage and the FDA must be alerted to the fact that this violates the consumer's right to know what they are eating.
